SCA Barista Skills Intermediate

International Professional Bartender Course is cohosted by International Bartenders Association (IBA) and Hong Kong Bartenders Association , is currently the highest qualified certified bartender course in Hong Kong.

Total: This is a 42-hour practical and theory bartender course, to be conducted in International Bartenders Association approved centre. The course will be taught by an IBA certified instructor.

建議報讀本課程的學員已有一定的咖啡相關工作經驗或已順利通過 SCA 咖啡師課程(初級)。
 

課程會首先讓學員對咖啡本身更深入的了解;其品種,來源和加工方法,以及它們如何對風味的影響。

然後,它建基於咖啡師初級程度,確保咖啡師可以校準咖啡使用量,研磨質感,水量和沖煮的時間,以沖煮出的所需的濃縮咖啡沖煮方案。先看看這些參數如何沖煮出一杯 “平衡” 濃縮咖啡,並確保咖啡師可以在濃縮咖啡萃取的不同部分中識別出酸味,甜味和苦味。

也會講解打發牛奶的技術令各學員可以製作出一些具有拉花圖案的牛奶咖啡。

此外,為反映出需要兼顧速度及品質,各學員將學習如何提高工作效率,使得飲品的訂單,能同時保持良好的過程和飲品質素。

各學員更會詳細了解到他們的設備,如不同風格磨豆機的優點和缺點,如何規劃自己的工作空間,以及基本的保養和維護。

此外,這個過程中也會觸及到其他方面,如客戶服務,健康安全和衛生,並通過他們的飲品賺取到的利潤。

課程內容可助各學員擁有充分的知識及技能,從而通過4個小型技術測試及1個筆試(70% 為合格分數)。
通過考試的學員,將可獲得 精品咖啡協會-Coffee Skills Program 學分 10分及證書一張!

– 咖啡歷史,認識 Arabic 及 Robusta
 認識咖啡品種,種植,處理過程,分級,儲存,運輸,烘培及如何鑑賞濃縮咖啡
– 了解咖啡萃取的原理及濃縮咖啡作基底的其他飲料製作方法
– 認識咖啡機和磨豆機的理論及操作
– 認識牛奶的成分,認識不同沖煮方法及拉花技巧
– 烘培基礎理論
– 咖啡生/熟豆保鮮度
– 認識沖煮基礎理論

(如所有考試合格,將獲頒發 SCA 的合格證書)

- Minimum age requirement: 18 years or older at the time of enrollment. 

- Normal tasting portion of wines, selected by our College. Check out here [link] for our wine sample guide.
- Unless otherwise specified, our courses will be conducted in Cantonese supplement with English course materials.
- All examination registration requires 2 weeks in advance to process.
