Tea is the essence of Chinese culture, and China is also known as “the homeland of tea”. With thousands of years of history, Chinese tea has enhanced our quality of life on many levels. How to appreciate Chinese tea? How to distinguish different tea like an expert? The Hong Kong Wines and Spirits Training College offers a Chinese Tea Appreciation course as an interest class. The course is taught by experienced instructor to guide you through the charm of Chinese tea, sharing the health benefits of drinking Chinese tea, methods of preparing different types of tea, storage and the correct ways of drinking it.
Our Chinese Tea Appreciation Course is classified into Elementary, Intermediate, Advanced and Proficient levels. Courses are informative and interesting. Students will be able to master the art of Chinese tea by learning the basics of Chinese tea, how to make a perfect cup of tea by using traditional utensils; how to access the appearance, aroma and taste – thereby understand and appreciate Chinese tea like a tea master.

 

 

Chinese Tea Appreciation Starter (I) – Interest class

Lesson 1

History and evolution of Chinese tea – Chinese tea was considered a type of medicine. Nowadays, Chinese tea has gained its popularity and the culture of tea drinking is growing. Are you interested in learning the evolution and the history of Chinese tea? With thousands of years of history, why is it still so popular?

Lesson 2

- Understand the use of traditional utensil in making Chinese tea - The best water for brewing Chinese tea - How to heat water for making tea - The art of savoring tea - Using different tea cups for different tea - Importance of water clarity - Importance of water temperature for different tea

Chinese Tea Appreciation Starter (II) – Interest class

Classification and tea making process - Growing in different season and terroir will produce different types of tea. For example, tea leaves from the same Camellia sinensis plant (Family: Theaceae) can be used for making Pu-erh tea, Oolong tea, Green tea, etc. by brewing the tea leaves using different processes. How much do you know?

Lesson 1

Concept of green tea. Brewing of green tea produced in the same year. Why green tea has the highest content of Vitamin C compared to other tea? Why do we take a lower temperature when brewing green tea in a teapot?

Lesson 2

All about yellow tea and its brewing method – Yellow tea is not very common in Hong Kong. Why do some people describe the ups and downs of Deng Xiaoping’s political journey as the brewing of yellow tea? What is the difference between yellow tea and green tea?

Lesson 3

The charm of Formosa tea - the brewing of “Oriental Beauty” Formosa tea is extremely popular among the Chinese all over the world. Why do we use fragrance cup when we drink Formosa tea? Why only Taiwan produces this elegant tea - “Oriental Beauty”?

Ms. Lee Yuet Ngo

Ms. Lee Yuet Ngo (李月娥女士), senior tea training instructor. She first joined The Best Tea House in 1993 and was trained by Hong Kong based tea master Mr. Chan Kwok Yee (陳國義老師), thereby built a close relationship with Chinese tea and became a tea expert herself. In 2003, she received the certificate of “Tea Leaves and Tea Art Training” from Guangdong Academy of Agricultural Sciences (GDAAS) with merit. Later on, she worked at The Flagstaff House Museum of Tea Ware by the Hong Kong Leisure and Cultural Services Department as ambassador to promote Chinese tea drinking culture for 5 years. In 2007-2008, Ms. Lee helped promote the art of tea and perform demonstration during Hong Kong Museum Day. She also worked as a tea instructor for an interest class for HSBC’s staff for 5 years. Currently, she is a member of the Chung Yeh Alumni Association, Sheung Shui North Residents Association; and an instructor and consultant at Shenzhen Bontemps Wine Co., Ltd. – Bontemps Clubhouse and at Shui Yi Fang Clubhouse located in Shenzhen Dutch Flower Town in Nanshan District. read on Ms. Lee Yuet Ngo
